Ingredients
- 1 medium eggplant
- 2 eggs
- 1 1/2 or 2 lb. Longhorn Cheddar cheese
- 1 1/2 or 2 c. flour
- 1/2 tsp. salt
- 1/2 tsp. black pepper
Directions

1Cook eggplant 5 to 10 minutes or until tender, drain off water.

2Mix all ingredients together with eggplant.

3Pour into greased one-quart casserole dish or baking pan.

4Bake at 425° approximately 30 minutes.

5Cut cheese while eggplant is cooking and put a little grease on top of casserole before baking.

6If larger portion is desired, double recipe.
