  • 1 eggplant
  • 1 tsp. soda or salt
  • water
  • cracker crumbs
  • milk
  • medium white sauce
  • salt, pepper and other spices
  • 1 to 1 1/2 c. grated yellow cheese

    Cube eggplant; soak overnight in water with 1 teaspoon soda or salt.

    This removes the bitter taste and black.

    Next morning, drain and rinse.

    Coat eggplant pieces with milk and cracker crumbs.

    Cook in hot grease until browned.
