- 2 medium eggplants
- 1/2 lb. ground sausage
- 1/2 c. corn flake crumbs
- 1/2 lb. ground beef
- 1 small onion, chopped
- 1 c. Cheddar cheese, grated
- salt and pepper to taste
Directions

1Pare eggplant; cut in 1-inch cubes.

2Cook in boiling water until tender; drain.

3Brown the meats together with onion, salt and pepper.

4Drain mixture; add eggplant and 1/4 cup corn flake crumbs.

5Blend well.

6Pour into casserole.

7Cover with a layer of grated cheese.

8Sprinkle with remaining corn flakes.

9Bake at 350° for about 10 minutes.
