Ingredients
- 6 slices bacon, fried and crumbled
- 1 medium chopped green pepper
- 1 medium chopped onion
- 2 c. peeled, chopped and cooked eggplant
- 2 c. peeled, chopped and cooked tomatoes
- 1 (8 oz.) can tomato sauce
- 1/2 tsp. salt
- 1/4 tsp. dried oregano
- black pepper
- about 1 c. shredded Cheddar cheese
- bread crumbs
Directions

1Fry the bacon; crumble and set aside.

2Drain most of grease out of skillet.

3Saute the pepper and onion.

4Add the eggplant and remaining ingredients, except cheese and bread crumbs.

5Cook for about 5 minutes, stirring occasionally.

6Add crumbled bacon and about a cup of shredded Cheddar cheese.

7Spoon into lightly greased casserole; top with bread crumbs.

8Bake, uncovered, at 350° for 25 minutes.
