- 1 large eggplant
- 1 egg
- 1/2 c cubed medium sharp cheese
- 1/2 tsp salt
- Dash black pepper
- 20 Ritz crackers, crushed
- Cheese Slices
- Pat of butter
Directions

1Peel and cut up eggplant; boil in small amount of water on low heat until tender.

2Drain and mash; add cubed cheese, salt, pepper, egg and crushed Ritz crackers.

3Turn into buttered casserole.

4Top with sliced cheese to cover. Add butter pat and bake in 375 degree oven for 20 to 30 minutes.
