- 1 eggplant, cooked and cubed
- 1/2 c. bread crumbs
- 1 c. canned tomatoes
- 1 c. creamed corn
- 3 Tbsp. butter
- 1 medium onion
- 1 tsp. chopped bell pepper
- salt and pepper to taste
Directions

1Cook cubed eggplant in salted water; drain.

2Add bread crumbs, tomatoes and corn.

3Saute onion and bell pepper in butter.

4Add to eggplant mixture.

5Add salt and pepper.

6Put in greased casserole; top with cheese and bread crumbs.

7Bake in a 350° oven for 30 minutes.
