- 1 can celery soup
- 1 c. grated cheese
- 2 c. milk
- 1/4 c. butter
- 12 Ritz crackers, crushed
- 1/4 c. flour
- 1/8 tsp. salt
Directions

1Cook eggplant in salted water; drain.

2Add celery soup and Ritz crackers.

3Make a sauce from melted butter.

4Add flour and salt; stir well.

5Add cheese and blend until cheese is melted. Combine all and sprinkle with Ritz cracker crumbs.

6Bake at 350° until brown.
