- eggplant
- slices of Mozzarella cheese
- Ragu spaghetti sauce
Directions

1Wash eggplant and cut into 1-inch slices.

2Sprinkle with salt and allow to sit for 1/2 to 1 hour in colander.

3Squeeze water out of slices and pat dry with toweling.

4Dip slices in seasoned flour and brown in frying pan.

5Place in greased 9-inch square baking dish.

6Top each piece with a slice of Mozzarella cheese.

7Place a second slice of eggplant on cheese.

8Pour Ragu spaghetti sauce over the top.

9Bake at 350° for 45 to 60 minutes, covered for first 30 minutes.
