  • 1 large eggplant
  • 1 c. milk
  • 1 small onion
  • 1 c. mushroom soup
  • 1 stick oleo
  • 1/4 stick oleo
  • 1 egg
  • 1 c. grated cheese
  • 1/4 lb. saltines (crumbs)

Directions

    Peel eggplant; cut in pieces and cook in water until tender. Drain and mash; add 1/4 stick oleo, milk, egg, onion, cheese and soup.

    Mix well and pour in casserole.

    Mix cracker crumbs and 1 stick oleo.

    Pour over top of casserole.

    Bake for 30 minutes at 350° or until bubbles good.
