- 1 large eggplant
- 1 c. milk
- 1 small onion
- 1 c. mushroom soup
- 1 stick oleo
- 1/4 stick oleo
- 1 egg
- 1 c. grated cheese
- 1/4 lb. saltines (crumbs)
Directions

1Peel eggplant; cut in pieces and cook in water until tender. Drain and mash; add 1/4 stick oleo, milk, egg, onion, cheese and soup.

2Mix well and pour in casserole.

3Mix cracker crumbs and 1 stick oleo.

4Pour over top of casserole.

5Bake for 30 minutes at 350° or until bubbles good.
