  • 1 eggplant (medium-sized)
  • 1/4 onion, chopped
  • 1 can (1 1/3 c.) condensed tomato soup
  • 1/2 c. buttered crumbs
  • 1/2 c. bacon, diced
  • 3/4 c. cheese, grated
  • mushrooms if desired
