Ingredients

  • 1 medium-size eggplant
  • 1 tsp. salt
  • 2 Tbsp. chopped green peppers
  • 1 egg, beaten
  • 1 medium-size onion, chopped
  • 3/4 c. bread crumbs
  • 1 c. creamed corn
  • 1/2 tsp. pepper
  • 1/2 c. grated cheese

Directions

    Cook eggplant until tender; drain and mash.

    Then add all ingredients except cheese.

    Mix well and put in a baking dish. Sprinkle with cheese and bake at 350° for 30 minutes.
