- 2 lb. ground meat
- 2 large onions, chopped
- 1 bell pepper, chopped
- 1/2 tsp. oregano
- 3 eggplants
- 2 cans tomato sauce
- 1 tsp. Worcestershire
- salt and pepper to taste
- 6 eggs
- 1/2 c. Romano cheese, grated
Directions

1Brown meat, onions and bell pepper.

2Add tomato sauce and seasoning.

3Allow to cook 5 minutes.

4Slice and salt eggplants, then fry in a small amount of oil.

5Arrange slices of eggplant and sauce alternately in casserole dish.

6Bake at 350° for 45 minutes.

7Whip eggs and cheese together.

8Pour over casserole and bake an additional 15 to 20 minutes.
