- 2 1/2 lb. peeled & sliced eggplant
- 1-2 sliced vidalia onions
- 1 cup(s) seasoned bread crumbs
- 1 1/2 cup(s) croutons
- 1 cup(s) parmesan grated cheese
- 1/2 tsp. black pepper
- 1 can tomato sauce (15 oz.)
- olive oil
Directions

1Peel and slice eggplant. Layer and salt and allow to set for 25 minutes then rinse well. Brush both sides of eggplant with olive oil. Fry 3 minutes each side.

2In a 2 1/2 qt. casserole dish...Alternate layers of eggplant, onion slices, seasoned bread crumbs, pepper, and parmesan cheese. Pour 1 can of tomato sauce over the top when done layering.

3Bake at 350 degrees for 1+ hour. Cover with foil if you need to avoid burning the top.
