Eggplant Casserole

Ingredients

  • 2 1/2 lb. peeled & sliced eggplant
  • 1-2 sliced vidalia onions
  • 1 cup(s) seasoned bread crumbs
  • 1 1/2 cup(s) croutons
  • 1 cup(s) parmesan grated cheese
  • 1/2 tsp. black pepper
  • 1 can tomato sauce (15 oz.)
  • olive oil

Directions

    Peel and slice eggplant. Layer and salt and allow to set for 25 minutes then rinse well. Brush both sides of eggplant with olive oil. Fry 3 minutes each side.

    In a 2 1/2 qt. casserole dish...Alternate layers of eggplant, onion slices, seasoned bread crumbs, pepper, and parmesan cheese. Pour 1 can of tomato sauce over the top when done layering.

    Bake at 350 degrees for 1+ hour. Cover with foil if you need to avoid burning the top.
