- 1 medium or large eggplant
- salt and pepper
- 1 small onion, diced
- 2 Tbsp. butter
- 3/4 c. milk
- 3 Tbsp. shredded sharp cheese
- 1 c. crushed crackers
- 4 slices American cheese
Directions

1Pare and slice eggplant. Cook in salted water until tender. Drain and mash.

2Add other ingredients except cheese slices. Place in a greased 1-quart casserole dish.

3Bake at 350° for 40 minutes. Arrange cheese slices on top and bake an additional 20 minutes.
