Eggplant Casserole

Ingredients

  • 1 medium or large eggplant
  • salt and pepper
  • 1 small onion, diced
  • 2 Tbsp. butter
  • 3/4 c. milk
  • 3 Tbsp. shredded sharp cheese
  • 1 c. crushed crackers
  • 4 slices American cheese

Directions

    Pare and slice eggplant. Cook in salted water until tender. Drain and mash.

    Add other ingredients except cheese slices. Place in a greased 1-quart casserole dish.

    Bake at 350° for 40 minutes. Arrange cheese slices on top and bake an additional 20 minutes.
