- 1 medium eggplant
- 1 c. cheese
- 1 c. saltine crackers
- 2 or 3 eggs (depends on size)
- 1 1/2 c. milk
- salt and pepper
Directions

1Peel eggplant.

2Salt and pepper; cut into squares.

3Cook 5 or 6 minutes.

4Drain.

5Mix cheese, crackers, eggs and milk; stir thoroughly.

6Bake in a greased casserole pan for 35 to 40 minutes at 350°.
