  • 1 medium eggplant
  • 1 c. cheese
  • 1 c. saltine crackers
  • 2 or 3 eggs (depends on size)
  • 1 1/2 c. milk
  • salt and pepper

    Peel eggplant.

    Salt and pepper; cut into squares.

    Cook 5 or 6 minutes.

    Drain.

    Mix cheese, crackers, eggs and milk; stir thoroughly.

    Bake in a greased casserole pan for 35 to 40 minutes at 350°.
