  • 1 1/4 lb. eggplant
  • salt and pepper
  • 2 Tbsp. flour
  • oil
  • 1 small onion
  • 16 oz. can tomatoes
  • 1/2 tsp. dried basil
  • 1/2 lb. Mozzarella cheese
  • 3/4 c. grated Parmesan cheese

    Remove stalks from eggplant and cut lengthwise in 1/2-inch thick slices.

    Leave for 1 hour, then rinse and pat dry.
