- salt and pepper
- 2 Tbsp. flour
- oil
- 1 small onion
- 16 oz. can tomatoes
- 1/2 tsp. dried basil
- 1/2 lb. Mozzarella cheese
- 3/4 c. grated Parmesan cheese
Directions

1Remove stalks from eggplant and cut lengthwise in 1/2-inch thick slices.
