- 2 lb. eggplant
- 3 medium onions
- 1 lb. tart apples
- 2 tsp. pickling spice
- 1 1/2 c. vinegar
- 2 tsp. ground ginger
- 1 tsp. salt
- 3 1/3 c. dark brown sugar
Directions

1Peel and chop eggplant.

2Core and chop apples.

3Finely chop onions.

4Put the pickling spice in cheesecloth.

5Put all ingredients in pan, except sugar, and simmer for 30 to 40 minutes. Add sugar and simmer until thick and lustrous.
