- medium eggplant
- 1 1/2 tsp. salt
- 1 tsp. sage
- cornbread
- 1 chopped onion
- 1 sweet bell pepper
- 1 c. grated cheese
- 2 eggs
Directions

1Peel and dice 2 medium eggplants in saucepan.

2Cover with water; add 1 1/2 teaspoons salt and 1 teaspoon sage.

3Cook until tender, about 5 minutes, in baking pan.

4Mix cornbread, 1 chopped onion, 1 sweet bell pepper and 1 cup grated cheese.

5Pour eggplants and liquids over; stir to mix well.

6Add 2 beaten eggs; stir again.

7Sprinkle 1 cup grated cheese over top.

8Bake in 350° oven 1/2 to 1 hour until cheese has melted well.
