Salmon Muffins

Ingredients
- 1 (7 3/4 oz.) can red salmon
- milk
- 2 tsp. white sugar
- 1/4 c. salad oil or melted shortening
- 2 c. flour, sifted (all-purpose)
- 3 tsp. baking powder
- 1 tsp. salt
- 1 egg, beaten
Directions

1Drain and flake salmon, saving liquid.

2Add sufficient milk to liquid to measure 1 cup.

3Mix and sift flour, baking powder, salt and sugar into mixing bowl.

4Make a hole in center of dry ingredients.

5Combine oil, egg and milk mixture.

6Add to dry ingredients.

7Stir just until moistened to make a lumpy batter. Do not overmix.

8Fold in salmon.

9Spoon into greased muffin tin (2/3 full).

10Bake at 425° for 15 to 20 minutes.

11Makes 1 dozen muffins.

12Nice served with a salad.
