- 4 c. cooked rice
- 2 lb. ground chuck
- 1 large eggplant, peeled and sliced
- 1 medium onion, diced
- 1/2 medium bell pepper, diced
- 1 tsp. salt
- 1 tsp. red pepper
- 1 Tbsp. black pepper
- 2 Tbsp. vegetable oil
Directions

1Season ground chuck with salt and pepper.

2Saute meat and eggplant in oil on medium heat until done and moist.

3Add onion and bell pepper.

4Cook on low heat about 30 minutes.

5Add water, if needed.

6Add cooked rice.

7Cover; simmer on low heat for ten minutes.

8You may wish to add seasoning to adjust taste.

9Makes approximately 8 servings.
