- 1 eggplant
- 1 large egg
- 1/2 c. flour
- 3 Tbsp. sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/4 c. oil
- 1 tsp. vanilla
Directions

1Peel and cube eggplant.

2Cook in salted water (to cover, until tender).

3Drain thoroughly and mash.

4Beat egg.

5Blend in flour, sugar, baking powder and eggplant.

6Drop by spoonful in oil on medium heat.

7Brown, then turn and brown on the other side.

8If dough seems too soft, add more flour.

9Place on paper towel to cool.
