Ingredients

  • 4 to 5 lb. Boston butt or fresh ham
  • 1 large onion
  • 3 Tbsp. brown sugar
  • 3 Tbsp. dry mustard
  • 1/4 tsp. red pepper
  • 1/4 tsp. black pepper
  • 1 c. vinegar
  • 1 1/2 c. water
  • 1/2 c. ketchup
  • 1/2 c. Worcestershire sauce
  • 1 tsp. salt

Directions

    Put meat in roaster.

    Mix onion, sugar, mustard, pepper, vinegar, water, ketchup, Worcestershire sauce and salt.

    Pour over meat.

    Cover.

    Cook in a 325° oven for 5 to 6 hours until meat is very tender (falls off the bone).

    Let meat and drippings become cold.

    Remove all fat.

    Chop meat and reheat in sauce.

    May be frozen.
