- 1 lb. box lasagna
- 1 eggplant
- peanut oil
- 1 jar spaghetti sauce
- 1/2 lb. sliced Provolone cheese
- Parmesan cheese
Directions

1Cook noodles.

2Drain and peel eggplant and slice thin.

3Fry in peanut oil until soft.

4Drain on paper towels.

5Place some sauce on bottom of baking dish.

6Layer noodles, sauce, eggplant, cheeses.

7Continue layers, ending with cheeses.

8Bake at 350° for 40 minutes or until hot.
