Eggplant Meatless Balls

Ingredients

  • 1 eggplant, diced
  • 1/2 c. bread crumbs
  • 1 or 2 eggs (1 for medium eggplant; 2 for large eggplant)
  • 2 Tbsp. grated Italian cheese
  • 2 Tbsp. parsley
  • garlic and salt to taste

Directions

    Cook eggplant for 10 minutes.

    Strain and squeeze.

    Mix rest of ingredients together and form into small balls.

    Fry in oil or bake in a 350° oven. Good luck!
