Eggplant Meatless Balls

- 1 eggplant, diced
- 1/2 c. bread crumbs
- 1 or 2 eggs (1 for medium eggplant; 2 for large eggplant)
- 2 Tbsp. grated Italian cheese
- 2 Tbsp. parsley
- garlic and salt to taste
Directions

1Cook eggplant for 10 minutes.

2Strain and squeeze.

3Mix rest of ingredients together and form into small balls.

4Fry in oil or bake in a 350° oven. Good luck!
