- pepper and salt
- 1 eggplant
- 1 egg, beaten
- 1 c. bread crumbs
- olive oil
- 1 jar bottled spaghetti sauce
- grated Mozzarella cheese
- Parmesan cheese
Directions

1Peel eggplant and slice into 1/4-inch pieces.

2Salt and pepper the slices.

3Dip in egg and then in Italian bread crumbs. Fry in olive oil until golden brown; drain in paper towels.

4Cover bottom of baking dish with the spaghetti sauce.

5Place slices of eggplant in the dish; add sauce to cover.

6Sprinkle with grated Mozzarella cheese.

7Bake until cheese is melted at 350° (oven temperature).
