- 1/2 c. flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 1/2 lb. eggplant, peeled and cross sliced 1/2-inch thick
- 1/3 c. oil
- 2 c. spaghetti sauce
- 2 Tbsp. Parmesan cheese
- 3 eggs, beaten
Directions

1Mix flour, salt and pepper.

2Coat eggplant slices.

3Cook coated eggplant in a large skillet in hot oil until golden brown and barely tender (approximately 5 minutes).

4Drain on paper towels.

5Spoon a thin layer of sauce over the bottom of a 1 1/2-quart baking dish.

6Line with a layer of eggplant.

7Sprinkle with cheese (use more if desired to suit flavor).

8Pour part of the beaten eggs on top.

9Repeat layers ending with sauce and beaten egg.

10Bake 30 minutes at 375°.
