- 1 medium eggplant
- 1/4 c. butter or oleo
- 1 c. bread crumbs
- 1 small onion, chopped
- 1 tsp. sage
- 2 eggs, beaten
- salt and pepper to taste
- 1/4 c. milk
- Parmesan cheese
Directions

1Peel eggplant and cook (diced) in salted water until tender. Drain and mash.

2Add butter, milk, crumbs, onion, eggs and spices. Mix well.

3Pour into well-oiled baking dish and cover with cheese (takes about 1/4 cup of grated cheese).

4Bake in oven at 400° for about 20 minutes or until bubbly and brown.
