- 1 large eggplant, peeled
- 3 egg whites
- 2 c. whole wheat pastry flour
- 1/4 to 1/2 c. nonfat milk
- 1 c. spaghetti sauce
- 1/4 lb. Mozzarella cheese
Directions

1Make batter with flour, egg whites and nonfat milk.

2Dip pieces into batter.

3Either saute in pan or bake on greased cookie sheet at 350° for 45 minutes or until tender.

4Put onto platter. Spread with spaghetti sauce and shredded Mozzarella cheese.

5Put back in oven to melt cheese.

6Serve with brown rice and steamed broccoli.
