- 1 medium size eggplant
- olive oil
- basil
- 1 lb. Mozzarella cheese, grated
- 1 egg
- 1/4 c. Parmesan cheese
- 3 (8 oz.) cans tomato sauce
Directions

1Slice eggplant into 1/4-inch slices.

2Beat eggs.

3Dip slices in egg and then bread crumbs.

4Saute eggplant in olive oil until golden brown.

5Use a 2 1/2-quart casserole dish.

6Layer eggplant one slice thick on bottom.

7Sprinkle with Parmesan and basil. Cover with Mozzarella and tomato sauce.

8Alternate layers finishing with sauce.

9Sprinkle Mozzarella on top.

10Bake at 350° for 1/2 hour until bubbling.
