Eggplant Parmesan

  • 1 medium size eggplant
  • olive oil
  • basil
  • 1 lb. Mozzarella cheese, grated
  • 1 egg
  • 1/4 c. Parmesan cheese
  • 3 (8 oz.) cans tomato sauce

Directions

    Slice eggplant into 1/4-inch slices.

    Beat eggs.

    Dip slices in egg and then bread crumbs.

    Saute eggplant in olive oil until golden brown.

    Use a 2 1/2-quart casserole dish.

    Layer eggplant one slice thick on bottom.

    Sprinkle with Parmesan and basil. Cover with Mozzarella and tomato sauce.

    Alternate layers finishing with sauce.

    Sprinkle Mozzarella on top.

    Bake at 350° for 1/2 hour until bubbling.
