- 4 tsp. olive oil
- salt and pepper
- pinch of garlic
- spaghetti sauce
- small c. Parmesan cheese
Directions

1Slice eggplant 1 inch thick.

2Soak in cold water for 1 hour. Pat dry with paper towel to absorb water, sprinkle with salt and pepper.

3Place in skillet with four teaspoons olive oil and garlic.

4Turn eggplant over once on each side, cook approximately 4 minutes on each side.

5Cover with spaghetti sauce and place cover on skillet for one hour.

6Sprinkle with fresh grated Parmesan cheese.
