  • 2 large eggplant, peeled and sliced 1/4 inch
  • 28 oz. jar spaghetti sauce or make your own
  • 1/2 lb. mushrooms, sliced
  • 1 tsp. garlic powder
  • 1 tsp. oregano
  • 2 (8 oz.) pkg. Mozzarella cheese, sliced thin
  • 1/2 c. cornmeal
  • 1 c. milk
  • cooking oil

Directions

    Preheat oven to 350°.

    Mix spaghetti sauce, mushrooms, garlic powder and oregano.

    Heat in medium saucepan.

    Let sit.

    Dip eggplant in milk, then coat lightly with cornmeal; set aside.
