  • 1 large eggplant, sliced into 1/4 inch thick slices
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1/2 cup shredded cheese ,any kind
  • (Pecorino Romanoor ,reduced fat Beemster...)
  • salt and pepper, to taste
  • 1 1/2 cups canned tomato sauce or
  • (3 cups homemade tomato sauce)

  • Homemade Tomato Sauce:
  • 2 (28 oz) cans imported crushed tomatoes (Tuttoroso)
  • 3 cloves garlic, smashed
  • 1 tbsp olive oil
  • 1/2 large onion finely chopped
  • 1 cup carrots, finely chopped
  • 1/2 cup fat free chicken stock
  • fresh basil
