Ingredients
- 1 medium eggplant, peeled and cut lengthwise into 1/4-inch thick slices
- 2 Tbsp. olive oil
- 1/2 c. chopped tomatoes
- 1/2 c. chopped green peppers
- 1/2 c. chopped onions
- 1/2 c. mushrooms
- 1 tsp. dried oregano
- 1/2 tsp. garlic powder
- 1/2 c. grated Mozzarella cheese
- 1/2 c. grated Cheddar
- 2 tsp. Parmesan
Directions

1Saute tomatoes, peppers, onions and mushrooms in a little oil. Broil eggplant slices.

2Brush with the 2 tablespoons olive oil, 5 minutes to a side.

3Arrange in a 9-inch pie plate overlapping slices to form a crust.

4Combine vegetables and place on top. Sprinkle with oregano and garlic powder.

5Combine cheeses. Sprinkle on top.

6Place Parmesan on top of that.

7Bake until cheese is melted at 350° for 25 minutes.

8Makes 2 to 4 servings.
