  • 2 large eggplant
  • 3 eggs
  • vegetable oil
  • 3 (8 oz.) cans tomato sauce
  • 3/4 c. grated Parmesan cheese
  • 3 Tbsp. dried parsley
  • 2 tsp. dried oregano
  • salt and pepper to taste
  • 1 (8 oz.) bag shredded Mozzarella cheese

Directions
