- 3 or 4 eggs
- salt to taste
- pepper to taste
- 1/2 to 3/4 c. Cheddar cheese, shredded
- grated Parmesan cheese
Directions

1Steam eggplant until tender.

2Put in blender and mix in eggs, a little at a time.

3Pour into casserole dish.

4Mix in Cheddar cheese.

5Sprinkle Parmesan over top.

6Bake at 350° for 40 minutes.
