Ingredients

  • 1 large onion
  • 1 small green pepper
  • 3 Tbsp. oil
  • 3 Tbsp. flour
  • 1 (No. 2 1/2) can tomatoes
  • 1/2 tsp. chili powder
  • 1 tsp. salt
  • 1/2 tsp. oregano
  • 8 eggs
  • 1/2 c. or more grated cheese (suggest Swiss, Mozzarella or Romano)
  • several ripe olives, sliced

Directions

    Preheat oven to 350°.

    Slice onion and green pepper. Cook in oil until tender, but not brown. Blend in flour.

    Add tomatoes, salt, chili powder and oregano (jalapenos, if you dare).

    Cook slowly until sauce thickens slightly, about 20 minutes.

    Pour into shallow baking dish. Drop eggs in, one at a time, carefully. Scatter cheese and olives on top and bake until firm.
