- 4 cups low-moisture part-skim mozzarella cheese, divided
- 1 3/4 cups milk (I use 2%)
- 1 1/2 cups freshly grated parmigiano-reggiano cheese, divided
- 1/4 cup finely chopped onion
- 4 eggs, slightly beaten
- 1 teaspoon salt
- fresh ground black pepper
