- 12 eggs
- 1/4 cup sour cream
- 2 tablespoons mayonnaise
- 2 tablespoons chopped fresh chives, plus extra for garnish
- 1 1/2 teaspoons prepared horseradish
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon pepper
- Pinch salt
- 6 ounces smoked salmon, cut into 1/4-inch strips
Directions

1Place the eggs in a medium pot and cover with cold water.

2Bring to a boil over high heat.

3Immediately remove the pot from the heat, cover it and let stand for 10 minutes.

4Uncover the pot and let the eggs cool in the water.

5Peel the eggs and cut them in half lengthwise.

6Pop out the yolks into a bowl.

7Arrange the whites on a platter.

8Mash the yolks well with a fork or press them through a sieve.

9Combine the yolks with the sour cream, mayonnaise, chives, horseradish, vinegar, pepper and salt.

10Spoon or pipe the filling into the eggs.

11Roll each strip of salmon into a tight coil.

12Arrange these salmon rosettes on top of the yolks.

13Sprinkle with chives and serve.
