- 1 1/2 lb. elk round steak
- flour
- pepper
- 1/4 c. butter or oil
- 1 c. sliced mushrooms
- 1/2 c. chopped onion
- 1 clove garlic
- 2 c. beef broth (bouillon cube dissolved in water)
- 1 c. sour cream
Directions

1Cut round steak into thin strips (like French fries).

2Roll in flour and pepper (always salt wild meat after it has been cooked on both sides as the salt draws all the moisture out and leaves it tasteless).

3Brown in butter or oil.

4Add mushrooms, onion and garlic.

5When browned, stir in beef broth.

6Cover and cook 1 hour until tender.

7Stir in sour cream.

8Simmer 5 minutes more.

9Very good served over hot homemade buttered noodles.
