- 4 ears corn on the cob, shucked
- 1 tablespoon peanut oil, or as needed
- Salt to taste
- 3 tablespoons fresh mayonnaise
- 4 teaspoons guajillo chile powder
- 1 lime
- 1 cup crumbled cotija cheese
Directions

1Rub corn with oil and season with salt.

2Cook corn over an open fire grill or wood oven for 8 to 10 minutes.

3Remove from grill and rub with the mayonnaise; season with guajillo powder (molido). Place corn back on grill or oven for 2 minutes.

4Remove from heat, squeeze lime juice over corn then top with cojita cheese. Serve immediately.
