- 1 1/2 c. cooked beans
- 1 chopped onion
- 6 mushrooms, sliced
- 1 clove garlic, minced
- 1 chopped green pepper
- 1 Tbsp. chili powder
- 1 tsp. cumin
- salt and pepper to taste
- 1 c. Monterey Jack
- 1/2 c. Ricotta or cottage cheese
- 1/2 c. yogurt
Directions

1Saute in oil the onion, mushrooms, garlic and pepper.

2Add cooked beans and rest of seasoning.

3Simmer for 30 minutes.

4Mix separately the Ricotta or cottage cheese and yogurt.

5Oil casserole.

6Layer tortillas, sauce, 3 tablespoons cheese and 3 tablespoons cottage cheese and yogurt.
