Ingredients

  • 6 to 8 tortilla shells
  • 1 1/2 c. cooked beans
  • 1 chopped onion
  • 6 mushrooms, sliced
  • 1 clove garlic, minced
  • 1 chopped green pepper
  • 1 Tbsp. chili powder
  • 1 tsp. cumin
  • salt and pepper to taste
  • 1 c. Monterey Jack
  • 1/2 c. Ricotta or cottage cheese
  • 1/2 c. yogurt

Directions

    Saute in oil the onion, mushrooms, garlic and pepper.

    Add cooked beans and rest of seasoning.

    Simmer for 30 minutes.

    Mix separately the Ricotta or cottage cheese and yogurt.

    Oil casserole.

    Layer tortillas, sauce, 3 tablespoons cheese and 3 tablespoons cottage cheese and yogurt.
