  • 1 1/2 c. peas
  • 1 pound frozen hash brown potatoes, thawed
  • 3 cans El Paso enchilada sauce, divided
  • 1 1/2 c. shredded Cheddar cheese
  • 10 whole to 12 whole tortillas
  • additional shredded Cheddar cheese
