Enchilada Casserole

  • 1 lb. ground beef or 3 to 4 large chicken breasts, cooked
  • 1 medium onion, chopped
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can mild enchilada sauce
  • 1 pkg. flour tortillas, broken into long strips
  • 1 c. milk
  • 1/2 lb. grated cheese (8 oz. shredded cheese)

Directions

    Brown beef and drain off fat or cut chicken into bite-size bits.

    Add onion, soups, milk and sauce.

    Simmer 15 minutes, stirring occasionally.

    Layer in mixture and tortillas in casserole dish.

    Top with cheese.

    Cover dish and bake at 350° until cheese is melted.
