  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 sm. can Rotel tomatoes
  • 1 can enchilada sauce
  • 1 chopped bell pepper
  • 1 medium chopped onion
  • cooked chicken or beef, chopped
  • corn tortillas (flour can be used)
  • cheese (1 lb.) Monterey Jack, Cheddar or Velveeta

    Heat oven to 400°. Mix together the first six ingredients. Then, layer a pan with tortillas, mix and cheese. Tortillas should be first, and cheese should be on top. Cover and cook 1 hour, then uncover and cook 5 minutes.
