- 1 sm. can Rotel tomatoes
- 1 can enchilada sauce
- 1 chopped bell pepper
- 1 medium chopped onion
- cooked chicken or beef, chopped
- corn tortillas (flour can be used)
- cheese (1 lb.) Monterey Jack, Cheddar or Velveeta
Directions

1Heat oven to 400°. Mix together the first six ingredients. Then, layer a pan with tortillas, mix and cheese. Tortillas should be first, and cheese should be on top. Cover and cook 1 hour, then uncover and cook 5 minutes.
