  • 1 1/2 lb. ground beef
  • 1 c. chopped onion
  • 1 1/2 tsp. ground cumin
  • 2 whole crushed garlic cloves
  • 1 1/2 tsp. salt
  • 3 tsp. chili powder
  • 1 tsp. pepper
  • 1 c. water
  • 2 c. enchilada sauce
  • 12 corn tortillas
  • 16 oz. grated Monterey Jack cheese
  • 1 1/2 c. sour cream

Directions

    Cook ground beef and onion until brown.

    Discard drippings. Add onion, garlic, onion powder, salt, pepper and water.

    Simmer uncovered about 10 minutes until most of liquid is evaporated. Pour 1/2 cup enchilada sauce into greased 13 x 9-inch baking dish. Arrange 6 shells on bottom of pan.

    Spread another 1/2 cup of sauce evenly over shells.

    Spoon in beef mixture.

    Top with sour cream and 1/2 of grated cheese.

    Put on remaining 6 shells and sauce. Top with cheese.

    Cover with foil and bake at 375° for 40 minutes. Remove foil.

    Bake another 5 minutes.

    Cool and cut into squares.
