  • 1 can enchilada sauce
  • 5 c. V-8 juice
  • 1 can refried beans
  • 1 carton cottage cheese
  • 1 lb. hamburger, browned
  • 8 to 10 soft shell tortillas
  • 1 pkg. shredded Monterey Jack cheese
  • 1 pkg. shredded Cheddar cheese

Directions

    Heat enchilada sauce and V-8 juice to boiling.

    Pour 2/3 of mixture in 9 x 13-inch pan.

    Fill each tortilla with remaining ingredients.

    Then wrap each one.

    Place in sauce.

    Top with remainder of enchilada sauce, then remaining cheese.

    Bake at 350° for 45 minutes.
