  • 2 lb. ground meat (lean)
  • 1 large onion, chopped
  • salt and pepper to taste
  • 2 tsp. chili powder or 1 pkg. taco mix
  • 2 peppers, chopped
  • 1 large can chili

Directions

    Brown meat, salt, pepper, chili powder and onions.

    Pour off liquid.
  3. 3
    Spoon into flour tortillas and roll up.
  4. 4
    Layer in large pan side by side.
  5. 5
    Pour large can of chili over top of enchiladas. Bake 15 minutes at 350°.

    Take out and cover with cheese.

    Return to oven and bake until cheese melts.
