Fruit Cocktail Cake

  • 1 1/2 c. sugar
  • 2 c. flour plus 1/4 c.
  • 2 eggs
  • 1 (1 lb.) can fruit cocktail
  • 2 tsp. soda
  • 1/2 tsp. salt
  • 1/2 c. salad oil

Directions

    Mix sugar, flour, eggs, soda, salt, salad oil and juice from fruit cocktail, then add the fruit and mix.

    Pour into a large, greased and floured cake pan.

    Sprinkle about 1/2 cup Angel Flake coconut over top of cake.

    Bake at 350° for 40 to 45 minutes. Have ready the following topping and pour over the hot cake.
