- 1 onion, diced
- 1 green pepper, diced
- 2 medium potatoes, diced
- 1 can refried beans
- 1 pkg. tortilla shells (flour; 10)
- 1 can enchilada sauce
- 1 pkg. (8 oz.) shredded cheese
Directions

1Brown vegetables.

2Add meat and brown.

3Add beans and heat through.

4Divide up mixture on 10 shells.

5Fold over shells.

6Hold together with toothpicks.

7Place in greased 9 x 13-inch pan or larger.

8Pour enchilada sauce on top.

10Bake at 350° for 20 to 25 minutes or until heated through.
