Ingredients

  • 1 lb. ground beef
  • 1 onion
  • 1 can green chopped chilies
  • 1 can black olives
  • 1 tomato
  • 1 1/2 jars taco sauce
  • 1 pkg. tortilla shells
  • mild Cheddar cheese
  • Monterey Jack cheese

Directions

    Fry ground beef in pan (chop in small pieces).

    Mix beef with all the ingredients and 1 cup each of the 2 cheeses.

    Fill tortillas with about 2 spoonfuls.

    Make sure pans are greased before rolling enchiladas.

    Bake for 35 to 45 minutes or until golden brown.

    Five minutes before taking out, sprinkle Cheddar and Monterey Jack cheese over them.

    Take out when melted.
