- 1 lb. ground beef
- 1 onion
- 1 can green chopped chilies
- 1 can black olives
- 1 tomato
- 1 1/2 jars taco sauce
- 1 pkg. tortilla shells
- mild Cheddar cheese
- Monterey Jack cheese
Directions

1Fry ground beef in pan (chop in small pieces).

2Mix beef with all the ingredients and 1 cup each of the 2 cheeses.

3Fill tortillas with about 2 spoonfuls.

4Make sure pans are greased before rolling enchiladas.

5Bake for 35 to 45 minutes or until golden brown.

6Five minutes before taking out, sprinkle Cheddar and Monterey Jack cheese over them.

7Take out when melted.
